Irish Soda Drop Biscuits



Irish Soda Drop Biscuits are a great twist on the classic Irish Soda Bread. Serve them warm with lots of soft butter.

Prep Time: 15 minutesCook Time: 12 minutesTotal Time: 27 minutes

Yield: 24 I cut the recipe in half for 12 

Ingredients:

  • 3 cups flour
  • 1/3 cup brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon baking powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup buttermilk
  • 2 eggs, beaten

Optional:
  • 1 teaspoon caraway seeds
  • 1 cup dried currants
Preparation:
Preheat oven to 350 degrees F. In large bowl, combine flour, brown sugar, caraway seeds, baking powder, baking soda, and salt; mix well with wire whisk.
In medium bowl, combine melted butter, buttermilk, and eggs. Add all at once to dry ingredients and stir until almost combined. Add currants and stir until batter is combined.
Drop by rounded tablespoons onto parchment paper-lined cookie sheets. Bake for 10-14 minutes until the biscuits are browned. Serve warm.
